Cabanossi

    • Selected locally sourced pork trimmings are minced and mixed with imported spices, then naturally cold smoked and hung up to mature and dry.
    • Packaging:  + 250g each vacuum packed and unit 1kg each.

Coppa Ham

    • Thin meat cut taken from the shoulder, rubbed with salt and imported spices and rested until cured.  Thereafter it is spiced again with pepper and left to mature.
    • Packaging:  Sliced + 125g each vacuum packed and unit 3.5kg each.

Prosciutto Crudo

    • Selective cut taken from the leg and rubbed with salt and spices until cured.
    • Packaging:  Sliced + 125g each vacuum packed and unit 3kg each.

Portuguese Chourico

    • Sausage containing locally sourced pure pork.  Meat is coarse and contains high quantities of fat, red wine, garlic and paprika, filled into hog casings, made into a horse show, dried and smoked.  This Chourico is a traditional Portuguese Chourico.
    • Packaging:  + 150g vacuum packed.

Rolled Panchetta

    • Pork Belly rubbsed with salt, left to cure for a month, rolled, hung up and left to mature.
    • Packaging:  Sliced + 125g each vacuum packed and unit 3.5kg each.

Salami Sticks

    • Selected locally sourced pork trimmings are minced and mixed with imported spices, then naturally cold smoked and hung up to mature and dry.
    • Packaging:  Vacuum packed 250g each and unit 1kg.
